After all the festive feasting, I decided to go low key and cook a simple all Malaysian meal....Dried shrimp sambal and sambal petai which shares the same ingredients except adding the petai to the sambal petai. These are the ingredients. The pre-prepared sambal paste, tamarind pulp, petai, dried shrimps (soaked and chopped with chopper or pound with pestle and mortar)


Here are the ingredients for the sambal paste :

  • Lemon grass (serai)
  • Belacan (shrimp paste)
  • Shallots
  • Tumeric (kunyit)
  • Dried chillies (soaked in hot water, drain)
  • Tamarind paste

Blend the above ingredients, then add oil in wok and try till fragrant. Bottle and will keep for weeks at least.
